  • From Gorge Harbour and Baynes Sound, BC
  • Flavour is mildly briny, and finishes light and sweet
  • X-small size is 2-3” long
  • This is the preferred size for raw half shell use
  • Harvest date and harvest area are listed on accompanying shellfish tag

Handling & Storage

  • Store in cooler, between 1° to 4° C on ice, covered with a wet cloth, allow water to drain
  • Keep accompanying shellfish tag on file for 90 days
  • Ensure all oysters are alive. Discard any that do not open when tapped with finger

Cooking Tips

  • Mild flavoured with a light, sweet fruit finish
  • Although this x-small size is used primarily for raw consumption, it is also excellent grilled
  • People with compromised immune systems should avoid eating raw shellfish
