  • Very buttery texture, rich and salty, with a sweet, mildly fruity finish
  • Cultured in Baynes Sound, BC
  • Preferred size for raw half shell use
  • Harvest date and area is listed on accompanying shellfish tag

Handling & Storage

  • Store in cooler 1º to 4º C, covered with a wet cloth, ice, and allow water to drain
  • Keep accompanying shellfish tag on file for 90 days

Cooking Tips

  • Although this x-small size is used primarily for raw consumption, grilling in shell is also excellent
