Wild Coho Fillets

Oncorhynchus kisutch

  • Skin on, Pin Bone Out
  • Always full red-meat color
  • Fillets average 1.5-2.0 lbs each
  • Approx 5-6 fillets per case
  • Fillets are cut from troll caught, frozen at sea refreshed (thawed) Queen Charlotte Coho

Handling & Storage

  • Refreshed fillets have less elasticity due to having been frozen, so careful handling is a must
  • Always pick up fillet(s) with two hands – Coho’s soft, delicate texture will firm up beautifully when cooked
  • Process immediately and store well-iced. Avoid leaving product sitting in ice melt. Re-ice daily
  • Minimum shelf life is 3 days from delivery
