  • From Egmont, B.C.- the only government approved land-based farm
  • Fillets are skin-on, boneless and “buttons” removed
  • Flesh is white, with golden hued fat lines
  • Average fillet size is approximately 1.5 to 4 lbs

  • Store in cooler, between 1º to 4° C
  • Excellent shelf life, minimum 4 days from delivery

  • The mild flavor actually gets better after the fish ages for a few days
  • The very firm texture lends well to pan frying, grilling, and broiling
  • The cartilaginous backbone can be used as a thickener much like shark fin
